The variety and quality of Dallas breads reflects our commitment to gusty, innovative breads that stand out from the bunch.We use organic wholemeal, rye flour and unbleached white flour so they taste great and they're good for you! By careful application of two ancient and traditional methods of bread-making, sourdough and leaven, our highly skilled bakers create bread with a delicious piquant taste, excellent keeping qualities and higher nutritional value than the solely yeast-risen breads. Our organic wholemeal and rye flours are grown by Kialla Farms in the sweet soils of the Darling Downs and milled by Kialla on French burr-stones, before despatch to our Brookvale Bakery. We also use unbleached white flour (creamy in colour and free of chlorine) in some of our breads.This produces a higher textured loaf - reinforcing our belief that good bread doesn't have to resemble a brick to be good for you.
